Any best practices on how to use hibernate? Hibernate + session bean or
Hibernate + Spring service or simply using Hibernate Entity Manager

All depends on the context, eg, tools, runtime, environment, and architecture etc.

Christians book provides a wealth of guidence so I would suggest you have a read of his latest book.
