You mean the projects referenced on the screenshots ?

That is just a simple project I used to have something for the screenshots.

may I start my work with hibernate tools from design class diagram and table structure?
or I need develop java classes, from whitch will be avtomatically generated hibernate entity structure.

Hibernate Tools does not care.

it can help you reverse engineer from a database and give you hbm.xml and/or java annotated classes, but it also supports you having java classes with entity annotations to start with...your choice ;)
