Could someone explain the advantages of using velocity templates with hibernate. I've noticed references to it but not in alot of detail. Do you know of any documentation or links?

We removed velocity support from hibernate tools and replaced it with the much better FreeMarker support so use that instead ;)

And I don't know why you are asking which advantage it has besides that it allows you to customize the generated output of hibernate tools.
