Does anybody have any examples of creating the hibernate mappings dynamically through code? We may have a use for something like this and was wondering if anybody else has done a similar thing.

It's definitely doable :-)
Maybe have a look at the Hibernate tools or Annotations they does that. You probably don't need something so complex though.
