I currently have an EJB project with 30+ entity beans. I'm working on converting all of these to Hibernate. Is there any software that can look at an existing Postgres schema and generate the Hibernate Java business objects? It would be even better if the Java objects contained the xdoclet tags for making the mapping documents as well.
Thanks.

Sure - Use Middlegen and hbm2java combination. This is currently our recommended approach (as well as being popular).
The Middlegen wiki page will provide more information.
BTW: It can generate the XDoclet markup aswell.
