What I am trying to understand is whether Hibernate can be used for reading in values from arbitrary query result sets and mapping them in to a POJO as best it can.

Thanks

In a similar way in which iBATIS can map any old SQL statement to a POJO. I presume that Hibernate cannot as one of its fundamental requirements is that a POJO must have a unique id and map to a given table

sp support is available in Hibernate3 (development version)
you can use native SQL queries in Hibernate
A pojo, does not have to have a unique id. It is recommended however.
