Wrappering Hibernate Session Object for abstraction ?

wanting to wrapper the hibernate Session object with an inhouse extention --
Client wants to be able to replace hibernate with another DAO Layer if needed and they want to subclass or wrapper the Session object --

What is the best route for doing such a thing ?

It would be great if someone can extract the most important DAO discussions and put them on the Wiki. This is a real FAQ now.
