You can get to the JMX attributes so the mapping document names are possibible but not the configuration meta data.

I checked and the class and collection meta data is available from the SessionFactory object, so have a look at:

Code:
   public ClassMetadata getClassMetadata(Class persistentClass) throws HibernateException;
   public CollectionMetadata getCollectionMetadata(String roleName) throws HibernateException;

table and column names are only available via the Configuration object.
