I know that hibernate allows using keys that are not automatically generated (via generator=assigned), but is it possible to change a key of a loaded object ? Is hibernate aware of such change ? The problem is that I have some legacy tables that I have to use and most of them have natural keys. Thanks in advance.

No. It is the definition of the primary key that it does not change. If your relational model is broken, then fix it.
