Are there any tools out there that will convert Hibernate Annotations to something that is good for external documents?

For instances, something that will take the annotations and create a graphical DDL or something for a word document?

Have you looked at Hibernate Tools? There is a whole range of Eclipse plugins. I am not sure though whether any of the plugins fulfill your requirements.
