do I understand correctly, the entity configurations in the Hibernate Search are annotations based only? Is there some possibility to configure entities via xml?

It has not been implemented today, but if someone is willing to contribute I can show him the way. All the XML overriding machinery is in place, only the actual XML schema and the parser needs to be written.
