Is there any way to disable the use of prepared statements, or see the parameters that are put into the prepared statments?

Set log4j.logger.org.hibernate=info in your log4j.properties file.
Maybe someone else can fine tune this, down to the package, so you won't get so much logging, but the inserted parameters are shown.
