I need in my application to index fields created by the user.
The user will define the fields of document (Name, Age, Value, Address, Content, ...) and if the type of field is string, i will index this.
I see that in Hibernate Search we must predefine our indexed fields using the @Field Annotations.

It's possible to create Dynamic Indexed Fields and do a full-text search by this fields?

yes it is, the static annotations is usually more practical but you can add any number and kind of fields.
Have a look to @ClassBridge in reference docs to completely define your own document on a per-instance base.

ClassBridge is for index creation/update, for searching it's totally flexible as Search is not hiding the Lucene native APIs.
