I'd love to be able to utilize the Schema Visualization tool, but having jumped head-first into Annotations, it seems I no longer have that ability. The Visualization Eclipse feature seems only to respond to hbm.xml mapping files, and not the annotation information compiled into my model classes. Any chance that this is on the roadmap? I think it would add much to the platform.

It should just work with annotations (as long as you tell the tools you want us to do annotations)

In ant, use <annotationconfiguration> with hibernate.cfg.xml listing the classes or use <ejb3configuration/> with a ejb3 persistence archive.

In eclipse enable the checkbox in the console configuration for annotaitons/ejb3 and have the hibernate.cfg.xml list the classes.
