I did a search hoping to find information about a tool(s) to help create the mapping xml file but was unable to find anything. Does anyone have a link or know where I could find said tool?

If you are working against MS SQL Server 2000/2005, Oracle 8i/9i/10g or MS Access you could use NConstruct Lite: http://www.nconstruct.com/
It's rather easy to use but doesn't support everything in NHibernate yet (like the <many-to-many> tag).
