I have only 7 tables, and Hibernate initialization time is 66 sec. What will it do when I have 30 tables? Any way to improve it, other than doing

hibernate.cglib.use_reflection_optimizer=false ?

Some of these tables my application might never need during a particular run; any way to lazy-load them?

66 seconds is definitively too long, I don't think the number of tables is the reason. Try to use only one table, and it won't be much faster. There could be other reasons, but you need to provide more information about your system and your config.
