More of an ant issue than a hibernate thing. Examine the <javac> tag and see if the classpath it makes use of includes hibernate3.jar. It looks like the compile is not locating the hibernate3 jar on the classpath.

You can also do "ant -v <commands>" to push ant into verbose mode to see more precisely what it's doing (which should include itemizing the classpath)
