 Post subject: Adding audit fields like created by and updated by to object

I am trying to find out what is the best place to add audit fields to an object like created by and updated by that I have to add to a lot of objects on create and update to the db with out having to set these props on all objects.

I have a feeling that hibernate interceptors can be used to do some of this stuff, has any body done any thing like this.
