Is there really no way to make Hibernate display the real values instead of the question marks in the sql-output, when ShowSqlEnabled is set to true?

this would really help debuggin'!

There are some logging categories that you can set to debug which will show what values are being bound to the the SQL parameters. It's *very* verbose though. Set the logging level to DEBUG and you'll see which categories I mean.
