Is it necessary to include class fields used for versioning (version or timestamp) into equals() and hashCode() methods?

you should not need it - why ?

Use a natural key for equals/hashcode.

id,version, timestamp are all something that changes on insert (and version/timestamp also on updates) thus they are not safe to use for equals and hashcode while being in a java 2 collection.
