Is there a single property somewhere where I can turn caching on or off? I need to turn it off just for testing, but don't want to have to write separate 'non-caching' hbm.xml files.

Would removing the cache provider from your mapping file work? Or does that just cause nasty "can't find a cache" errors?

This will just result in EHCache - Provider being used as the default.
