Is it feasible to have one-session-per-step in a swing-based Wizard in order
to ensure that each step has the latest updated object while still being free to use whatever access strategy makes since, be it jdbc, lazy collections or conventional hibernate?

Use session per transaction, execute transaction in single thread and I think you will have no problems with any UI.
