I know this has probably been answered a million times, but I can't find it said anywhere in terms that I can understand.

If I use Hibernate (or some other GPL / LGPL) unmodified in my application, and sell my app to the public, do I have to release the code of my app and make my app GPL?

I had always thought that the answer was "no", but someone here at work is insisiting that it's "yes".

Can someone point me to a place that clearly outlines this?

In the case of LGPL, the answer is "no". In the case of GPL, "yes".
