I've posted in the jboss forums but it seems like it's more of a Hibernate issue so I've linked to it here:

I've updated my post on the jboss forums. I have a really dirty "working solution" that involves adding a dependency to the hibernate 4.0.1 module in jboss 7.1.1.... this can't be the only way to have this work!

Anyway just wanted to post this in case anyone was curious.
