A status field in a class is the boolean type. After being production, I have found that a third status is needed. As a result, I need to change the field from boolean to Enum. How to make a smooth transition on the Hibernate/DB?

I think for the smooth change char(3) which would be work like T(true),F(False) and ?(3rd status).
i hope it should work in your case because i have worked on the same thing :)
